A lot of people can claim their coffee is the best. After all, it's just a matter of opinion, right? Wrong! There is a very structured and accurate grading chart available in the coffee industry. The slower growing from a little less sunlight focuses the fullness of the flavor in the coffee bean and the shade keeps the bean from developing a lot of acidity and bitterness. No chemicals touch the coffee so it is as natural as nature intended it to be! Shade grown coffee is important for so many reasons. First, when a coffee is shade-grown, the natural foliage around the plant is left alone. In coffee, deforestation is a huge problem. It's easier on the farmers to just clear out the natural surroundings and grow their coffee in clean cut rows. The coffee also grows faster. However for those that commit to shade-grown coffee, they see a premium that others don't. This provides them more money to constantly improve their crop. The other side of shade-grown coffee is the fact that since it grows more slowly, it concentrates the fullness of the coffee flavor in the bean, providing a much richer coffee experience when it is finally brewed. Shade-grown coffees are also noted for having far less acidity due to less direct sunlight on the plant itself. Organic is also important. Chemicals in America have changed over the years. They've become more eco-friendly and less risky to one's health as well. However they've also become a lot more expensive. A lot of the farmers in these underprivileged countries can't afford the new chemicals and therefore, purchase what they can afford (many of which, have been outlawed by America). Since these countries don't have the same rules and regulations as we do, you can't always expect their chemicals to be the same regulated ones we have. Even then, many will still argue that chemicals in general are bad for you. Camano Island Coffee Roasters doesn't blend any of their pure varietal coffees. What this means is when you receive a pound of Colombian coffee, you are drinking coffee that is 100% Colombian - there are no cheap filler beans. Each and every coffee (with the exception of our Varietal Supremo which is our only blend for an espresso machine) is a pure coffee from one country. This is where the romance of coffee is. Enjoy drinking the best specialty coffee from each country as though you were sitting there drinking it. You can taste so many different nuances; hint of cocoa or caramel, a note of spice or a nutty undertone... each one of those nuances come from the soil of that individual country. This makes the coffee truly unique. All of Camano Island Coffee Roasters' coffee is roasted and shipped daily. This ensures that the customer gets the freshest possible coffee when it arrives at their door. Freshness makes such a huge difference in coffee. After the first month, coffee really starts to lose a lot of the flavor that makes it taste so great. When you purchase coffee in the grocery store (average age of 6 months or older), you will never understand or experience the wonderful flavor of freshness.
